Our beef cattle are raised naturally on our 80 acre farm near Viroqua in southwest Wisconsin.
The genetics of our herd are primarily Angus. We graze our cattle rotationally, giving them a fresh paddock every day and we NEVER feed them grain! They truly are grass-fed and grass-finished.

In order to better serve you, our customer, we have put together a 1/8 beef box. Full of a variety of cuts, this is a great option if you don't want to order a whole animal, or go through the extra steps of communicating/picking up meat from the processor.

Ground beef - $6.50/pound - Ground beef is cryovac packaged in approximately one pound flat packages, facilitating efficient freezer storage. An added benefit is that they thaw extremely quickly compared to tube packages.
We have ground beef available in the freezer, give us a call and come pick some up.
Whole beef The price on this beef is based on hanging weight, which is the weight of the carcass after slaughter while it hangs curing for 10 days or so. It is usually 50-55% of live weight and differs for each animal. The amount of meat you have packaged to take home is less than hanging weight, perhaps 60-65% of hanging weight, depending on whether you take bones, etc. If you will use bones for broth, soup, etc., go ahead and have them packaged for you; they are part of the hanging weight and their weight will therefore be included in your bill.
Customers are responsible for the following charges:
a) Beef price is paid to Liberty Ridge Pastured Meats, LLC, E5916 Cina Road, Viroqua, WI, 54665. Down payment is $400 per animal
to reserve your meat. Balance is due after slaughter (when hanging weight is determined) and before pick up at Solar Meats in
Soldier's Grove. Whole price -- $3 per
lb. hanging weight.
b) Slaughter fee is paid directly to Solar Meats. There is a $110 slaughter fee, there is an additional $50 rendering fee per beefer as well.
c) Processing charge is based on hanging weight -- $0.88 per lb. for paper wrapped or $0.99 per
per lb. for cryovac packaging. In either case, the ground beef will be wrapped using cryovac. If you choose paper wrap you will
be charged $0.88 per lb. for all of your meat, including the ground beef wrapped in cryovac.
Customers will communicate directly with Solar Meats @ 608.624.5525 regarding processing details, types of cuts, size of packages, type of wrap, etc.
